Description

Transform a simple box of brownie mix into decadent, thick cookies featuring a fudgy center and crisp, crackly edges. These chocolate-loaded treats are incredibly easy to whip up and perfect for satisfying intense cravings in under twenty minutes.

Ingredients

  • 1 (18-ounce) box brownie mix (such as Ghirardelli)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 5 tablespoons vegetable oil
  • 2 tablespoons water
  • 1/2 cup mini chocolate chips
  • 3/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F and line a large baking sheet with parchment paper.
  2. In a large bowl or stand mixer with a paddle attachment, combine the brownie mix, flour, eggs, oil, water, and mix-ins until a thick, sticky dough forms.
  3. Use a cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  4. Bake for 8 to 10 minutes until a thin film forms on top and the batter is no longer glossy.
  5. Let the cookies cool on the pan for 2 minutes before transferring them to a wire rack to cool completely.

Notes

For the best texture, ensure you do not overbake these cookies; they should still look slightly soft when removed from the oven as they will firm up while cooling. These cookies can be stored in an airtight container for up to 3 days to maintain their fudgy center.
