Description

These towering, rustic cookies are packed with a trio of chocolates and feature a thick, gooey center that rivals any professional bakery. By using cold butter and a brief stint in the freezer, you’ll achieve a perfectly golden exterior and an incredibly satisfying, chunky texture.

Ingredients

  • 200g cold unsalted butter, chopped
  • 180g light brown sugar
  • 80g white caster sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 250g self-raising flour
  • 150g plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 300g mixed chocolate chips (milk, white, and dark)

Instructions

  1. Chop the cold butter into chunks and beat with a wooden spoon for one minute until slightly softened.
  2. Add the light brown and white caster sugar, mixing just until combined.
  3. Stir in the eggs and vanilla extract until the mixture is uniform.
  4. In a separate bowl, whisk together the flours, baking powder, and salt, then fold into the wet ingredients.
  5. Add the chocolate chips and use your hands to distribute them evenly throughout the thick dough.
  6. Shape the dough into 120g balls and place them on a tray lined with greaseproof paper.
  7. Freeze the dough balls for at least 90 minutes to ensure they stay thick during baking.
  8. Preheat oven to 350°F (180°C) and bake the frozen balls on a preheated tray for 15 minutes until edges are golden.

Notes

To prevent the dough from spreading too much, do not skip the freezing step as this ensures the centers stay soft while the edges crisp up. You can store the unbaked dough balls in the freezer for up to three months, baking them directly from frozen whenever you need a fresh treat.

Fresh Ingredients for Natural Abundance

Baking the best cookies starts with reaching for high-quality, genuine ingredients. We want real butter, good vanilla, and mountains of beautiful chocolate.

  • Cold Unsalted Butter: We use 200g (about 14 tablespoons) of cold butter, just slightly softened, to keep the cookies tall and rich.
  • Light Brown and White Caster Sugar: A blend of 180g (almost 1 cup) brown and 80g (1/3 cup) white sugar gives us that perfect chewy center and crisp edge.
  • Large Eggs & Real Vanilla: Two room-temperature eggs and a splash of authentic vanilla extract bind our dough with gorgeous flavor.
  • The Flours: A mix of 250g (2 cups) self-raising and 150g (1 1/4 cups) plain flour creates the ultimate thick texture.
  • Chocolate: We load these up with 300g (about 1.5 cups) of beautiful milk, white, and dark chocolate chips.

The Natural Baking Process

Step 1: Prepare the Butter

Chop your cold butter into rustic chunks and toss them into a large mixing bowl. Beat it with a wooden spoon for just a minute until slightly broken up, being careful not to over-cream.

Step 2: Add the Sugars

Pour in the light brown and white caster sugar, mixing just until combined. Try not to over-mix here, as we want to keep the butter firm for those gorgeous, tall cookies.

Step 3: Mix the Wet Ingredients

Stir in both large eggs and the genuine vanilla extract. The mixture might look a little separated right now, but trust the process—it comes together beautifully!

Step 4: Fold in the Dry Ingredients

In a separate bowl, whisk your self-raising flour, plain flour, baking powder, and a touch of salt. Tip this into your butter mixture and fold gently until a thick dough forms.

Step 5: Load Up the Chocolate

Pour in all that glorious milk, white, and dark chocolate. Use your hands to genuinely work the chocolate into the dough, making sure every bite will be loaded.

Step 6: Shape the Dough

Weigh out generous 120g portions and roughly shape them into rustic balls. Place them on a greaseproof paper-lined tray—lumps and bumps add to their natural charm!

Step 7: Freeze

Cover the tray and pop it in the freezer for at least 90 minutes. This secret step stops them from spreading, giving you that ultimate thick center.

Step 8: Bake to Perfection

Preheat your oven to 350°F (180°C). Heat a lined baking tray in the oven for 5 minutes, then place 3-4 frozen dough balls on it with plenty of space. Bake for 15 minutes until the edges are golden, letting them cool slightly before enjoying.

Keeping your butter cold is the true secret to making these stay gorgeously tall in the oven. If your kitchen is incredibly warm, you might want to chill the bowl before mixing! I highly recommend reading about the resting process in this wonderful guide on no chill chocolate chip cookies to see how temperature changes everything. Also, don’t rush the freezing time—patience brings the most beautiful, authentic results. Natural Seasonal Swaps

The best part of a wholesome loaded dough is how easily it adapts to the seasons. In the spring, I love swapping half the chocolate for bright, tart dried cherries and toasted pistachios. During autumn baking sessions, adding natural pecans and a dash of cinnamon makes them feel so incredibly cozy. You can even try recreating your favorite bakery style chocolate chip cookies by mixing in chunks of beautiful, natural honeycomb!

Serve these towering beauties warm, right from the oven, with a tall glass of cold milk or a fresh mug of coffee. I love arranging them on a wooden board at the center of the table so everyone can just grab one. If you are hosting a gathering, pair them with our famous Crumbl cookie recipe copycat for an incredibly abundant dessert spread!
