Description
These classic holiday treats offer a delicate, melt-in-your-mouth texture paired with the rich, earthy flavor of toasted pecans. Dusted in a double layer of confectioners’ sugar, they provide a beautiful snowy aesthetic perfect for winter gifting and festive dessert platters.
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup confectioners’ sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup pecans, finely chopped
- 1/4 teaspoon salt
- 1 cup additional confectioners’ sugar for coating
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the softened butter, 1/2 cup of confectioners’ sugar, and the vanilla extract using an electric mixer until smooth and creamy.
- Gradually mix in the flour, finely chopped pecans, and salt until the dough is just well combined.
- Roll the dough into walnut-sized balls and place them 2 inches apart on ungreased baking sheets.
- Bake for 12 to 15 minutes, ensuring the bottoms are light golden brown while the tops remain pale.
- Let the cookies sit on the sheet briefly to set, then transfer to a wire rack. While still warm, roll them in a bowl of confectioners’ sugar.
- Once the cookies have cooled completely, roll them in the sugar a second time for a thick, snowy appearance.
Notes
To ensure the most tender results, avoid over-mixing the dough once the flour is added. If you find the cookies are breaking while rolling in the first layer of sugar, let them cool for an additional two minutes on the wire rack to firm up slightly.
