Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup light or dark brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon dark molasses
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned whole rolled oats
  • 1 1/2 cups raisins, soaked in warm water and blotted dry
  • 1/2 cup chopped walnuts (optional)


Instructions

  1. In a large bowl, cream the softened butter, brown sugar, and granulated sugar together on medium speed for about 3 minutes until smooth and creamy.
  2. Add the eggs one at a time, mixing on high, then stir in the vanilla and molasses until fully combined.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt until evenly distributed.
  4. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
  5. Fold in the rolled oats, soaked and blotted raisins, and optional walnuts using a spatula.
  6. Cover the dough and chill in the refrigerator for 30 to 60 minutes to prevent the cookies from spreading too thin.
  7. Preheat your oven to 350°F (177°C) and line two large baking sheets with parchment paper.
  8. Scoop approximately 2 tablespoons of dough per cookie and place them 2 inches apart on the prepared sheets.
  9. Bake for 12–14 minutes until the edges are lightly browned but the centers still appear soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

To ensure the softest cookies, avoid over-baking even if the centers look slightly pale, as they will firm up while cooling on the sheet. If you prefer a more complex flavor profile, try adding a pinch of ground cloves or nutmeg alongside the cinnamon. Always ensure your raisins are thoroughly blotted after soaking so they don’t introduce unwanted moisture into the cookie dough.
