Description

These decadent no-bake keto treats combine a luscious vanilla cream center with crunchy, dark chocolate cookie crumbles for the ultimate low-carb snack. Designed to satisfy massive cravings without the sugar crash, they are the perfect high-fat indulgence for anyone following a ketogenic or gluten-free lifestyle.


Ingredients

  • 1 cup almond flour
  • 1/4 cup dark cocoa powder
  • 1/2 cup keto-friendly sweetener (Swerve or Xylitol)
  • 1/4 cup melted grass-fed butter or coconut oil
  • 1/2 teaspoon instant coffee
  • Pinch of salt
  • 1/2 cup full-fat coconut milk
  • 1 cup heavy whipping cream or chilled coconut cream
  • 1 teaspoon vanilla extract


Instructions

  1. Toast the almond flour in a dry skillet over medium heat for 2 to 4 minutes until golden and fragrant, stirring constantly.
  2. Transfer the toasted flour to a bowl and stir in the cocoa powder, half of the sweetener, a pinch of salt, the optional coffee, and melted butter until a dark crumble forms.
  3. Press one-third of the crumble mixture into the bottom of 12 cupcake liners or silicone molds, then place both the molds and the remaining crumbles into the freezer.
  4. In a small saucepan over medium heat, whisk the coconut milk with the remaining sweetener and a pinch of salt until the sweetener is fully dissolved, then remove from heat and let cool.
  5. In a large chilled bowl, whip the heavy cream or coconut cream to soft peaks, then gently fold in the vanilla extract and the cooled coconut milk mixture until fluffy.
  6. Fold the frozen chocolate crumbles into the vanilla cream, spoon the mixture into the prepared molds, and freeze for at least 2 hours until solid.

Notes

For the best texture, allow the fat bombs to sit at room temperature for about 10 minutes before eating to let the cream soften slightly. Ensure all your ingredients are full-fat to maintain the stability of the cream and provide the best ketogenic macros.
