Description

Ingredients

  • 1 1/2 cups gluten-free flour blend

  • 1/2 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar (for dough)
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)


Instructions

  1. Whisk together the gluten-free flour, xanthan gum, salt, cinnamon, baking soda, and cream of tartar in a medium bowl to distribute leavening agents evenly.
  2. In a large bowl, use a mixer to beat the softened butter and 3/4 cup of sugar until light, fluffy, and pale.
  3. Add the room-temperature egg and pure vanilla extract, beating at medium speed until just combined.
  4. Slowly mix the dry ingredients into the wet mixture on a low setting until a soft, slightly sticky dough forms.
  5. Wrap the dough tightly in plastic wrap and refrigerate for at least one hour to hydrate the flour and firm up the butter.
  6. Preheat your oven to 375°F (190°C) and prepare a coating by mixing the remaining sugar and cinnamon in a small dish.
  7. Shape the chilled dough into 12 balls, roll them in the cinnamon-sugar mixture, let rest for five minutes, and roll a second time for a thick crust.
  8. Place the balls two inches apart on a parchment-lined tray and bake for 10 minutes until edges are set but centers are still soft.
