Ingredients
- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dried cherries, finely chopped
- 1/2 cup cherry preserves
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup white chocolate chips
Instructions
- Preheat your oven to 350°F and line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the room-temperature butter and sugar for 2-3 minutes until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, folding in the chopped dried cherries until just combined.
- Scoop rounded teaspoons of dough onto the prepared baking sheets.
- Bake for 10-12 minutes or until the edges are just barely golden.
- Immediately upon removing from the oven, use the back of a small spoon to press a shallow well into the center of each cookie.
- Allow the cookies to cool on a wire rack while preparing the filling.
- In a microwave-safe bowl, heat the cherry preserves on high for 1 minute until bubbling.
- Mash or blend the preserves until smooth, then stir in the semi-sweet chocolate chips until the mixture is glossy and fully melted.
- Spoon the chocolate-cherry ganache into the cookie wells and finish with a drizzle of melted white chocolate.
Notes
For the most professional-looking drizzle, transfer the melted white chocolate to a small plastic bag and snip off a tiny corner. If the cherry-chocolate ganache begins to set before you finish filling the cookies, simply microwave it for 5-10 seconds to restore its smooth consistency. Ensure the butter is truly at room temperature to prevent the dough from being too stiff to form the wells.
