Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Red and pink colored sugars for decoration


Instructions

  1. In a large bowl, cream the softened butter with the granulated and brown sugars for 5 to 7 minutes until the mixture is light and fluffy.
  2. Beat in the room-temperature egg, almond extract, and vanilla extract until the mixture is thoroughly combined and fragrant.
  3. In a separate small bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the creamed butter mixture, mixing just until a soft, pliable dough forms.
  5. Load the dough into a cookie press and press shapes 2 inches apart onto ungreased, cold baking sheets.
  6. Decorate with colored sugars and bake at 375°F for 7 to 9 minutes until the edges are barely golden brown.
  7. Cool the cookies on wire racks to ensure they achieve a perfect, crisp snap.

Notes

To maintain sharp, defined edges on your cookie shapes, always use chilled baking sheets between batches. If you are baking in a warm kitchen, you can rinse your pans under cold water and dry them completely to prevent the butter in the dough from melting before it hits the oven.
