Description

These decadent thumbprint-style treats combine a buttery, cherry-studded dough with a rich chocolate-cherry ganache center. Topped with a striking white chocolate drizzle, they offer a sophisticated and loaded twist on the classic candy shop favorite.

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dried cherries, finely chopped
  • 1/2 cup cherry preserves
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F and line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the room-temperature butter and sugar for 2-3 minutes until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, sift together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, folding in the chopped dried cherries until just combined.
  6. Scoop rounded teaspoons of dough onto the prepared baking sheets.
  7. Bake for 10-12 minutes or until the edges are just barely golden.
  8. Immediately upon removing from the oven, use the back of a small spoon to press a shallow well into the center of each cookie.
  9. Allow the cookies to cool on a wire rack while preparing the filling.
  10. In a microwave-safe bowl, heat the cherry preserves on high for 1 minute until bubbling.
  11. Mash or blend the preserves until smooth, then stir in the semi-sweet chocolate chips until the mixture is glossy and fully melted.
  12. Spoon the chocolate-cherry ganache into the cookie wells and finish with a drizzle of melted white chocolate.

Notes

For the most professional-looking drizzle, transfer the melted white chocolate to a small plastic bag and snip off a tiny corner. If the cherry-chocolate ganache begins to set before you finish filling the cookies, simply microwave it for 5-10 seconds to restore its smooth consistency. Ensure the butter is truly at room temperature to prevent the dough from being too stiff to form the wells.

The Stuffing Process\n\n### Step 1: Prep the Workspace\nPreheat your oven to 350° F and line your baking sheets with parchment paper. We are about to create some beautiful chaos, and you want your pans ready to handle these monsters.\n\n### Step 2: Cream the Base\nIn a large bowl, cream together the room-temperature butter and sugar. You want this mixture to be light and fluffy, which takes about two to three minutes of vigorous mixing.\n\n### Step 3: Add Liquid Gold\nBlend in your egg and that pure vanilla extract. This is where the kitchen starts smelling like a high-end bakery.\n\n### Step 4: Sift the Dry Goods\nSift together the flour, baking powder, and salt. Sifting is key for that soft, professional texture that makes these the best cookies on the block.\n\n### Step 5: Fold in the Fruit\nAdd the dry ingredients to your butter mixture along with the chopped dried cherries. Mix just until blended; overmixing is the enemy of a soft, gooey cookie.\n\n### Step 6: Scoop and Bake\nScoop rounded teaspoons of dough onto your prepared sheets. Bake them for 10-12 minutes or until they are just lightly golden around the edges.\n\n### Step 7: Create the Wells\nAs soon as the cookies come out of the oven, use the back of a small spoon to immediately form a shallow well on the top of each one. Transfer them to a rack to cool while you prep the filling.\n\n### Step 8: Melt the Preserves\nIn a microwave-safe bowl, heat your cherry preserves on high for one minute. They should be bubbling and ready to transform.\n\n### Step 9: Mash and Blend\nUse an immersion blender or a fork to break up any large fruit chunks in the preserves until you have a relatively smooth base.\n\n### Step 10: The Ganache Transformation\nStir your semi-sweet chocolate chips into the hot preserves. Keep stirring until the chocolate is fully melted and the mixture is glossy and smooth.\n\n### Step 11: Fill and Drizzle\nSpoon that chocolate-cherry mixture into the wells of your cooled cookies. Melt your white chocolate and drizzle it wildly over the top for that signature Riley Thomas Swanston look. Allow them to cool completely before devouring!

Mashup Ideas and Go Even Bigger\n\nIf you’re feeling extra audacious, try swapping the white chocolate drizzle for a peanut butter drizzle to create a PB&J vibe that is totally unexpected. This technique is similar to how we layer flavors in our peanut-butter-blossom-cookies. You can also go full monster-mode by stuffing a whole maraschino cherry into the center of the dough before baking for a double-stuffed surprise. For those who love a bit of crunch, try adding a half-cup of toasted pecans or walnuts to the dough mixture. You could even swap the dried cherries for dried cranberries if you want a slightly more tart flavor profile. The rules are meant to be broken, so don’t be afraid to experiment with different candy mix-ins like crushed Oreos or even chopped Kit Kats in the ganache center!
